The 16 theatrical kitchens of The Line will transformed into a bustling and energetic Thai Food market from 17 to 26 May 2013.

Chef Ratree Khongthong is from the Pichit province of Northern Thailand and has worked in Bangkok to hone her skills in Thai culinary techniques.

She has created a delightful plethora of Thai favourites, including Pad Thai Goong, Thai-style fried noodles with tamarind sauce, Tom Yam Goong, Thod Man Pla and Thod Man Goong (deep-fried fish cakes and prawn cakes), Som Tam Goong Tang (green papaya salad with grilled prawns) and many more. The delightful plethora of Thai favourites is best paired with Chang beer. Each bucket of four bottles cost $24.90++

To enhance the Thai cultural experience, two dancers from the Thai Dance Society of Singapore will welcome guests at The Line's entrance each evening. They will perform a medley of traditional Thai dances from different provinces.

This promotion is available for dinner from 6:30pm to 10:30pm daily. During the promotions, diners will be spoil with the usual diverse spread of international cuisine whilst enjoy the specially crafted spicy Thai set menu. Prices start at $72 per adult and $36 per child.

Mon, Wed & Sun  :  $72++ per adult (including coffee & tea)

- The Food

Miang Kam (meaning "eating many things in one bite") is a traditional snack from Thailand. Consists of fresh betel leaves, roasted coconut shavings, roasted peanuts, dried shrimps, ginger, lime, bird's eye chili, shallots and along with an exquisite sweet-and-salty assam sauce.

Spoon a little of everything onto the heart-shape leaf, wrapped it and chew it. It has an unusual and exciting mix of tastes. I quite enjoy the nice subtle flavour but felt the taste of the leaf was a tad empowering.

Unfortunately this street food of Thailand is not included in the menu. Chef has specially prepared for the media only.

A complimentary shot of this drink will be served during dinner. Diners can order the big glass (shown in this photo) @ $10++.

The drink is filled with gracious Thai flavours of lemongrass, lime, chillis, mint leaf etc. A sophisticated ways to bring out the sweetness, tangy and hot (spicy) all in a drink. Spicy but very morish, it leave your taste buds tingling in expectation.

Khaotang Nga Thong (fried rice crackers and assorted chutneys)

Fried rice crackers was served with 3 Thai chutneys. The condiment in a bowl is made of pork and prawn, a little sweet and wet. The next condiment is made of salted egg, obviously it will b salty but not overly. Last but not least, Thai chili jam with tamarind is detectable yet mild. The assorted chutneys offer a delicious combination of sweet, salty and spicy to the crackers.

Lab Gai (minced chicken with ground rice and mint leaf)
Yam Woon Sen (spicy glass noodle with poached prawn)
Yam Som O (white pomelo salad with shallot flake)

Lab Gai (top): The small stature has a deep and relatively spicy savory flavours that mingle beautifully with a fresh taste of mint leaf. Wrapped with thinly slice cucumber that add a little crunch and cooling effect to the palate.

Yam Woon Sen (center): The glass noodles absorb the spicy, sour and salty flavour very nicely. It's more pungent than the other food, at the same time refreshing.

Yam Som O (bottom): Pomelo sections bursting with juice, savory dried prawns balanced with bright flavor notes from lime and tamarind, and finished with the satisfying scent and crunch of shallot flakes. The salad offers a delicious combination of sweet, salty, sour, spicy and a tad bitterness (from the pomelo) as minor accents to the flavours.

Every bite of above offers a taste-explosion of Thai flavors!

Hor Mok Souffle (steamed fish mousse in pandan leaf)

The velvety smooth taste and not spicy otak will be even delicious for kids. Served with generous rich coconut cream.

Tom Yam Goong (spicy prawn soup with lemongrass and coriander)

The clear soup is more to Chai Mai style, gentle to the palate. Not the usual explosion of tom yam, it was still tasty thou I would preferred it to be spicier and more sour.

Kaeng Khiew Wan Gai (green curry with chicken and eggplant)

Fragrant spices to create a rich creamy green curry with chunks of tender chicken and eggplant. Thou it was a little too salty, it was still delicious with a mild curry flavour.

Phad Graprao Moo (wok fried minced pork with garlic and holy basil)

Nice boost of umami flavour but not as spicy and fragrant compare to Lab Gai.

Phad Phak Kanah (stir fried kale)

Crunchy greens was nicely cook, but felt the gravy was a tad salty.

Khao Niew Mamuang (sticky rice with mango)

A sweet, creamy and slightly salty coconut cream complement the sweet mango and sticky rice very well.

Kluay Thod Nga Khao (banana fritter with sesame)

Strong banana flavour yet moderately sweet with a crunchy bite. Can't really taste or see the sesame thou.

- My Opinion
I must say that it was a thoroughly enjoyable experience. The Thai food was lip-smackingly delicious, with flavors and ingredients that are reassuringly familiar, yet refreshingly exotic.

Although I did not have anything from the buffet spread (as I was too full), I know the food spread and quality was good. I had been there for the seafood buffet spread twice, and it never disappoint me.

If you are a fans of Thai food, do not miss the chance to delight your taste buds with authentic Thai cuisine at The Line.
